- 2 medium onions peeled and chopped
- 3 cloves of garlic (optional)
- 2 boxes of Closed cup mushrooms
- 1 Tin of Coconut Milk
- 1 organic vegetable stock cube
- Sweat the onions and garlic in a little olive oil until soft, then add the mushrooms and toss for 2 minutes.
- Add water to cover and stock cube, bring to the boil and gently stir till cooked through.
- Blitz with a hand blender till smooth and add coconut milk. Stir gently on heat and voila!
