Local Motion - Recipe: Mushroom Soup

Serves 4-6


  • 2 medium onions peeled and chopped
  • 3 cloves of garlic (optional)
  • 2 boxes of Closed cup mushrooms
  • 1 Tin of Coconut Milk
  • 1 organic vegetable stock cube



  1. Sweat the onions and garlic in a little olive oil until soft, then add the mushrooms and toss for 2 minutes.
  2. Add water to cover and stock cube, bring to the boil and gently stir till cooked through.
  3. Blitz with a hand blender till smooth and add coconut milk. Stir gently on heat and voila!
